ABC Challenge

So, in an effort to involve my little bird in what I'm doing a bit more, and in an effort to practice his letters more often and in an effort to get back into the habit of cooking and trying new things more often (I've been such a slacker for the last few months and haven't been eating well at all)....I am doing an ABC food Challenge. At the end of the project, I would like to put these in a book, along with samples of his writing.

Our evening meal will consist of what the letter is for the day. We'll of course start with "A"








Avocado Grapefruit Salad:

1 cup of vanilla yogurt.
2 tablespoons of Brown Mustard. (I used the wheat kind with garlic in it)
1 tablespoon of honey.
1 Teaspoon of Lemon Juice
Pinch of Salt
Pinch of Pepper
2 grapefruits, sliced in half across segments.
1 small ripe avocado, peeled and seeded and sliced.
½ small head of lettuce.


To make the dressing: combine the yogurt, brown mustard and honey in a bowl with salt and pepper.

To prepare the grapefruits, using a serrated knife, cut around the grapefruit between the peel and fruit, making sure the knife touches the base of the fruit. Remove fruit and slice into 2-inch pieces.

Add the grapefruit and avocado to the bowl with the dressing and toss.Wash and dry the lettuce and place on a serving platter.Spoon grapefruit and avocado on lettuce.


Acai Berry Juice (very sweet, though it says no sugar added, not a big juice drinking family)



Apple dipped in Acai Berry Juice mixed with Yogurt. (Much better!)



We also had Apple Jacks for Breakfast.
I had him write down and spell out everything we cooked. He loves making lists and learning how to put the letters together, just not quite to the point where he can do it himself.
