B Day

Well... coming home to a kitchen pretty torn up. (The counter tops are going in the bakers pantry!!!) it was hard to cook anything extravagant, so we went the easy route, with things that can be cooked outside for the most part.

Sometimes simple is the best anyway.

Brats on Buns
Bacon Broccoli

Bananas
Blackberry Coconut Milk Ice Cream




This recipe was adapted from the blueberry recipe on Tasty Kitchen.

2 ½ cups Fresh or Frozen Blackberries
¾ cups Sugar
⅛ teaspoons Salt
3 cups Coconut Milk (full-fat Version), Well Stirred (About 1 and 1/2 cans)
1 teaspoon Vanilla Extract


In a medium saucepan, combine blackberries, sugar, and salt. Over medium heat, bring the mixture to a boil, mashing the blueberries with the back of a fork. Simmer for 5 minutes, stirring frequently. Remove from heat and let cool for 10 minutes.

In a blender, combine coconut milk, the blackberry mixture, and vanilla extract. Cover and chill the mixture until cold, about 2 hours. (I put it in the freezer for about 20 minutes because I didn't have 2 hours!)

Pour the mixture into the bowl of an ice cream maker and freeze according to manufacturer’s instructions. Transfer the ice cream to an airtight container and place in the freezer for several hours, or until ice cream hardens. (I like it on the soft side!)The ice cream can be stored in the freezer for up to 1 week.

This stuff was seriously good and much less sugary and milky than normal ice cream. LOVED it.



Bacon Broccoli (Same recipe as Bacon Beans, only made with Broccoli...SOOO GOOD!!!)

4or 5 cups of fresh broccoli
4 or 5 slices of bacon chopped into little pieces
2 or 3 tablespoons butter
1/2 chopped onion
3 garlic cloves chopped
Salt and pepper to taste

Cook bacon a few minutes before adding the rest of the ingredients. Add everything else and let cook on medium until beans are tender.

It's really fun for Park. Yesterday he was writing every thing we ate with his grandparents. He's really really improving the last few weeks with his letters. Now, just need to work on putting the words together. Oh.. and some artwork for the book. YAY!!!
